Ingredients
  

  • 1 cup Greek yogurt
  • 1 cup fresh blueberries
  • 1–2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon water

Method
 

  1. Line a small tray with parchment paper or prepare a silicone mini-muffin mold.
  2. Add blueberries, water, and lemon juice to a small saucepan.
  3. Cook over medium-low heat for 5–7 minutes, pressing some berries gently until they form a thick sauce.
  4. Allow the blueberry sauce to cool for several minutes.
  5. Stir Greek yogurt, honey or maple syrup, and vanilla until smooth.
  6. Spoon about 1 tablespoon of yogurt into each prepared portion.
  7. Add a small amount of cooled blueberry sauce to each yogurt portion.
  8. Use a spoon tip or toothpick to make 2–3 gentle swirls through each bite.
  9. Freeze for at least 2 hours, or until firm.
  10. Let the bites sit at room temperature for 2–3 minutes before removing and serving.
  11. Store leftovers in an airtight freezer-safe container for up to 2 weeks.

Notes

  • Use thick Greek yogurt for the best texture.
  • Cool the blueberry sauce before swirling it into the yogurt.
  • If the bites are difficult to remove, let them sit out for 2–3 minutes.
  • For less sweetness, use only 1 tablespoon of honey or maple syrup.
  • Frozen blueberries can be used after thawing and draining excess liquid.
