Caramel Apple Cinnamon Rolls

Ingredients
  

For the Dough
  • ¾ cup whole milk
  • 2¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 3½ cups all-purpose flour
  • 1 teaspoon salt
For the Apple Filling
  • 3 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • ⅓ cup packed brown sugar
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon cornstarch
For the Cinnamon Layer
  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • 1 tablespoon ground cinnamon
For the Topping
  • ½ cup caramel sauce

Method
 

  1. Warm the milk to 105–110°F (40–43°C). Stir in the yeast and 1 tablespoon of the measured sugar. Rest for 5–10 minutes until foamy.
  2. Add the remaining sugar, eggs, and melted butter. Stir in 3 cups flour and the salt. Gradually add the remaining flour as needed to form a soft dough.
  3. Knead by hand for 7–9 minutes, or with a dough hook for 5–6 minutes, until smooth and slightly tacky.
  4. Place the dough in a lightly greased bowl, cover, and rise in a warm place for 60–75 minutes, or until roughly doubled.
  5. Melt 2 tablespoons butter in a saucepan. Add the diced apples, brown sugar, and cinnamon. Cook for 5–7 minutes.
  6. Stir the cornstarch into the apples and cook for 1 minute. Transfer to a shallow dish and cool completely for about 20–30 minutes.
  7. Roll the risen dough into a 14 × 18-inch rectangle about ¼ inch thick.
  8. Mix the softened butter, brown sugar, and cinnamon. Spread evenly over the dough, leaving a ½-inch border along one long edge.
  9. Distribute the cooled apple filling evenly over the cinnamon layer, leaving excess liquid behind.
  10. Starting from the long edge, roll the dough into a snug log and gently seal the uncovered edge.
  11. Divide the log into 12 equal rolls, about 1½ inches wide.
  12. Arrange the rolls cut-side up in a greased 9 × 13-inch baking dish.
  13. Cover and rise for 30–45 minutes until puffy. Preheat the oven to 350°F (175°C) during the final 15 minutes.
  14. Bake for 25–30 minutes, until the tops are lightly golden and the centers are cooked through.
  15. Rest for 10 minutes, then drizzle approximately ½ cup caramel sauce over the warm rolls.

Notes

  • Best apples: Granny Smith, Honeycrisp, Pink Lady, or Braeburn hold their shape well.
  • Make sure the apple filling is completely cool before adding it to the dough.
  • Avoid pouring excess apple liquid onto the dough, as this can create soggy centers.
  • If the rolls brown too quickly, loosely cover them with foil for the remaining baking time.
  • For overnight preparation, refrigerate the shaped rolls covered in the baking dish. Let them stand at room temperature for 45–60 minutes before baking.
  • Store leftovers covered for up to 2 days at room temperature or 4 days in the refrigerator.
  • Freeze baked, cooled rolls for up to 2 months.
