  • 2 medium potatoes (about 1 pound), peeled and diced into ½-inch pieces
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter or cooking oil
  • ½ small onion, diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 2 tablespoons fresh herbs (optional, for topping)

Method
 

  1. Heat a large skillet over medium heat and add 2 tablespoons of butter or oil.
  2. Add diced potatoes and cook for 12–15 minutes, stirring occasionally until the potatoes become golden and fork-tender.
  3. Add diced onion, salt, pepper, and paprika. Cook for 2–3 minutes until the onion softens.
  4. Crack eggs into a bowl and whisk until the mixture becomes smooth and evenly combined.
  5. Pour eggs over the cooked potatoes. Lower the heat and gently stir until soft egg curds begin forming.
  6. Sprinkle shredded cheese over the scramble and cover the skillet for 1–2 minutes until the cheese melts.
  7. Remove from heat and serve warm with fresh herbs, toast, salsa, or your favorite breakfast sides.
