  • 8 pineapple rings
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • Powdered sugar (optional)

Method
 

  1. Gather all ingredients and equipment.
  2. Drain and thoroughly dry the pineapple rings.
  3. Mix the flour, sugar, baking powder, and salt.
  4. Whisk together the egg, milk, and vanilla.
  5. Stir the wet ingredients into the dry ingredients until combined.
  6. Heat vegetable oil to 350°F (175°C).
  7. Coat each pineapple ring in the batter.
  8. Fry each ring for 2–3 minutes per side until golden brown.
  9. Drain on a wire rack or paper towels.
  10. Dust with powdered sugar and serve warm.

Notes

  • Fresh or canned pineapple both work well.
  • Dry the pineapple completely before dipping.
  • Don't overcrowd the pan.
  • Maintain the oil at 350°F (175°C).
  • Serve immediately for the crispiest texture.
  • Reheat leftovers in the oven or air fryer instead of the microwave.
