- Line an 8×8-inch baking pan with parchment paper.
- Measure all ingredients before heating.
- Combine butter, sugars, cream, and salt in a saucepan.
- Bring to a boil and cook to 234–236°F.
- Remove from heat and let stand 1 minute.
- Stir in white chocolate chips until melted.
- Mix in marshmallow creme until smooth.
- Add buttered rum flavoring and vanilla.
- Beat until thick and slightly less glossy.
- Spread evenly into the prepared pan.
- Refrigerate for 2 hours.
- Slice into 36 squares and serve.
Notes
- Use a candy thermometer for the most dependable results.
- Don't stir once the mixture reaches a full boil.
- Wipe sugar crystals from the sides of the pan with a damp pastry brush if needed.
- Beat only until the mixture thickens and begins to lose its shine.
- Store in an airtight container in the refrigerator for 2 weeks or freeze for 3 months.
- Toasted pecans or walnuts make an excellent addition.
- Let chilled fudge sit at room temperature for 10–15 minutes before serving for the creamiest texture.
