Ingredients
  

Pancake Batter
  • 1 ½ cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk
  • 2 large eggs
  • 3 tablespoons melted butter, slightly cooled
  • 1 teaspoon vanilla extract
Cheesecake Filling
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
Strawberry Sauce
  • 1 ½ cups fresh strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Method
 

  1. Let eggs and buttermilk sit at room temperature for 10 minutes.
  2. Simmer strawberries, sugar, and lemon juice for 8 minutes to make the sauce; set aside to cool.
  3. Whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  5. Fold wet ingredients into dry until just combined; small lumps are fine.
  6. Beat softened cream cheese with powdered sugar until smooth; transfer to a piping bag.
  7. Let the batter rest for 5 minutes.
  8. Heat a griddle or pan over medium-low heat for 3 minutes.
  9. Pour ¼ cup batter per pancake and pipe a small swirl of cheesecake filling on top.
  10. Cook 2-3 minutes until bubbles form and edges look dry, then flip and cook 1-2 minutes more.
  11. Stack pancakes and top with strawberry sauce and extra filling. Serve warm.

Notes

  • Cream cheese filling can be swapped for mascarpone for a milder flavor.
  • Sauce can be made a day ahead and refrigerated; rewarm slightly before serving.
  • For extra-fluffy pancakes, avoid pressing down on them with the spatula while cooking.
