Healthy Spinach Mushroom Quiche

A protein-rich, veggie-packed quiche made with sautéed mushrooms, wilted spinach, and a light egg custard. Lower in fat than a classic quiche but just as creamy, with a firm, sliceable texture perfect for meal prep.

Ingredients
  

  • 1 pie crust (store-bought or homemade), optional
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1 small onion or shallot, diced
  • 1 clove garlic, minced
  • 5 oz fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)
  • 5 large eggs
  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup shredded low-fat cheese (Swiss or mozzarella)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of ground nutmeg

Method
 

  1. Preheat oven to 375°F. Line a 9-inch pie dish with crust, or grease well for a crustless version.
  2. Heat olive oil in a skillet over medium heat. Sauté mushrooms and onion for 7–8 minutes, until all liquid has cooked off.
  3. Add garlic and cook 30 seconds. Add spinach in handfuls, stirring until fully wilted, about 2–3 minutes.
  4. Remove from heat and let the vegetable mixture cool for 5 minutes.
  5. In a bowl, whisk eggs and milk until pale and slightly foamy.
  6. Whisk in salt, pepper, and nutmeg.
  7. Fold cooled vegetables and cheese into the egg mixture.
  8. Pour filling into the prepared crust or dish.
  9. Bake 35–40 minutes, until edges are set and the center barely wobbles.
  10. Rest 10–15 minutes on a cooling rack before slicing.

Notes

  • For a dairy-free version, use unsweetened almond milk and a dairy-free cheese shred.
  • Leftovers keep in the fridge for up to 4 days, or freeze individual slices for up to 2 months.
  • Swap in feta, goat cheese, or a handful of chopped bell pepper for variation.
  • Always let mushrooms cook fully dry before adding spinach — this is the single biggest factor in avoiding a watery quiche.
