Ingredients

Cheesecake Filling
  • 16 ounces (2 packages) cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Dough
  • 2 cans refrigerated crescent roll dough
Cinnamon Sugar
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon
Topping
  • ¼ cup unsalted butter, melted

Equipment

  • 9×13-inch baking pan
  • Large mixing bowl
  • Small mixing bowl
  • Hand mixer or stand mixer
  • Silicone spatula
  • Pastry brush
  • Measuring cups
  • Measuring spoons
  • Cooling rack
  • Parchment paper (optional)

Method

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Mix ½ cup sugar with 2 tablespoons cinnamon until evenly combined.
  3. Sprinkle a thin layer of the cinnamon-sugar mixture over the bottom of the prepared pan.
  4. Unroll one can of crescent dough and press it evenly into the bottom of the pan. Pinch the seams closed.
  5. Beat the softened cream cheese, remaining ½ cup sugar, egg, and vanilla until smooth and creamy.
  6. Pour the cheesecake filling over the dough and spread evenly using a spatula.
  7. Carefully place the second sheet of crescent dough over the cheesecake filling and pinch any seams together.
  8. Brush the dough with melted butter and sprinkle the remaining cinnamon-sugar mixture evenly over the top.
  9. Bake for 30–35 minutes, or until the top is golden brown and the center is slightly set.
  10. Allow the bars to cool at room temperature for 1 hour.
  11. Refrigerate for at least 2 hours, or overnight for the cleanest slices.
  12. Cut into 16 bars using a sharp knife, wiping the blade clean between cuts. Serve chilled or slightly softened at room temperature.

Notes

  • Always use room-temperature cream cheese for a smooth filling.
  • Don't overbake. The center should still have a slight jiggle.
  • Chilling overnight produces cleaner slices.
  • Line the pan with parchment paper for easy removal.
  • Store leftovers in the refrigerator for up to 5 days.
  • Freeze individual bars for up to 2 months.
