Ingredients
  

For the tacos

  • 1 pound 80/20 ground beef
  • 8 small flour tortillas, about 6 inches wide
  • 4 slices American or cheddar cheese, cut in half
  • 8 strips bacon
  • ¾ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • ½ teaspoon ground black pepper

For the burger sauce

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon dill pickle relish
  • 1 teaspoon Worcestershire sauce
For the toppings
  • 1 cup shredded iceberg lettuce
  • 1 medium Roma tomato, diced
  • ¼ small red or white onion, finely chopped
  • ½ cup dill pickle chips, quartered

Method
 

  1. Prepare the toppings
  2. Cut the bacon
  3. Cook the bacon
  4. Make the burger sauce
  5. Portion the beef
  6. Cover the tortillas with beef
  7. Sear the beef
  8. Flip the tacos
  9. Melt the cheese
  10. Add the toppings
  11. Serve the tacos

Notes

  • Spread the beef slightly thinner around the tortilla edges. Thick edges can shrink and pull away while cooking.
  • Do not move the tacos before the beef forms a crust. They should release from the skillet with little resistance.
  • Pour off excess grease between batches so the tortillas become lightly crisp rather than oily.
  • American cheese melts smoothly, while cheddar gives the tacos a sharper flavor.
  • Keep the toppings refrigerated until serving so the lettuce stays crisp.
  • Prepare the sauce, bacon, and chopped toppings up to 24 hours ahead. Store each part separately in the refrigerator.
  • To reheat leftovers, remove the cold toppings and warm the beef-tortilla base in a dry skillet over medium-low heat for 1 to 2 minutes per side.
