Ingredients
  

  • 1½ lb Yukon Gold potatoes
  • 1 lb breakfast sausage
  • 10 large eggs
  • 1 cup shredded cheddar cheese
  • 1 bell pepper
  • ½ small red onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • 2 green onions

Method
 

  1. Heat the oven to 425°F.
  2. Cut the potatoes into ½-inch cubes and chop the bell pepper and red onion.
  3. Toss the potatoes with 2 tablespoons olive oil½ teaspoon salt, garlic powder, smoked paprika, and ¼ teaspoon black pepper.
  4. Roast the potatoes at 425°F for 25–30 minutes, turning them once halfway through.
  5. Cook the breakfast sausage in a skillet over medium heat for 8–10 minutes, until it reaches 160°F.
  6. Whisk the eggs and scramble them over low to medium-low heat for 4–6 minutes, until softly set.
  7. Divide the potatoes, sausage, eggs, and cheddar among 5 containers.
  8. Add chopped green onions after the bowls stop steaming.
  9. Refrigerate the bowls within 2 hours of cooking.

Notes

    • Store refrigerated bowls for 3–4 days.
    • For better texture, keep salsa, avocado, and other wet toppings separate.
    • Freeze cooled bowls for up to 2 months for best quality.
    • Thaw frozen bowls in the refrigerator before reheating.
    • For a lighter bowl, use turkey breakfast sausage and reduced-fat cheddar.
    • For extra vegetables, add cooked spinach, mushrooms, or broccoli.
