Ingredients
  

  • 8 oz cream cheese, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 cup shredded coconut, for coating

Method
 

  1. Leave the cream cheese at room temperature for about 30 minutes, until soft but not warm or runny.
  2. Beat the softened cream cheese in a medium bowl for 45 to 60 seconds, until smooth and free of lumps.
  3. Add the powdered sugar in three portions, mixing on low after each addition. Mix in the vanilla with the final portion.
  4. Fold 2 cups shredded coconut into the mixture with a spatula until evenly combined.
  5. Cover the bowl and refrigerate the mixture for 30 to 40 minutes, or until firm enough to scoop.
  6. Scoop about 1 tablespoon of mixture for each ball and place the portions on a parchment-lined tray.
  7. Roll each portion gently between your palms for 5 to 8 seconds, until smooth and round.
  8. Place 1 cup shredded coconut in a shallow bowl. Roll each ball in the coconut until lightly coated.
  9. Refrigerate the finished balls for 30 minutes, or until firm.
  10. Let the balls sit for about 5 minutes before serving. Serve chilled.

Notes

  • Keep the mixture cold while shaping. If it becomes sticky, refrigerate it for another 10 to 15 minutes.
  • Avoid adding large amounts of extra powdered sugar to fix a soft mixture. Extra chilling usually works better.
  • Unsweetened shredded coconut can be used for a less sweet version.
  • Store the finished balls in an airtight container in the refrigerator for up to 5 days.
  • Place parchment paper between layers if stacking.
  • Freeze in a sealed container for up to 2 months and thaw overnight in the refrigerator.
  • For smaller bite-size balls, use about 2 teaspoons of mixture per portion.
