One Pan Creamy Beef Sausage Gnocchi

Tender potato gnocchi, browned beef sausage, fresh spinach, and Parmesan come together in a rich cream sauce in one skillet. This comforting dinner takes about 30 minutes, requires minimal cleanup, and is beginner-friendly.

Ingredients
  

  • 12 oz fully cooked beef sausage, sliced into 1/2-inch rounds
  • 1 lb potato gnocchi
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup finely grated Parmesan cheese
  • 2 cups baby spinach
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • Salt, to taste
  • Extra Parmesan, optional for serving
  • Chopped fresh parsley, optional for serving

Method
 

  1. Cut the beef sausage into rounds about 1/2 inch thick so the pieces cook and brown evenly.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sausage in a single layer and cook for 4–5 minutes, turning until lightly browned. Transfer it to a plate.
  3. Reduce the heat to medium. Add the diced onion to the same skillet and cook for 3–4 minutes, stirring occasionally, until soft and translucent.
  4. Add the minced garlic and cook for 30–45 seconds, stirring frequently, until fragrant. Do not let it turn dark brown.
  5. Pour in 1 cup beef broth and 1 cup heavy cream. Scrape the browned bits from the bottom of the skillet and bring the mixture to a gentle simmer for about 2 minutes.
  6. Stir 1 pound potato gnocchi into the sauce and make sure the pieces are separated and coated.
  7. Cook at a gentle simmer for 5–7 minutes, stirring every minute or so. Return the browned sausage during the final 2 minutes. If the sauce becomes too thick before the gnocchi is tender, add 2–3 tablespoons beef broth.
  8. Reduce the heat to low. Gradually stir in 1/2 cup finely grated Parmesan and cook for 1–2 minutes, until melted and creamy. Season with 1/4 teaspoon black pepper and optional 1/4 teaspoon red pepper flakes.
  9. Add 2 cups baby spinach and gently stir for 1–2 minutes, until wilted.
  10. Remove the skillet from the heat and let the gnocchi rest for 2–3 minutes. If the sauce thickens too much, stir in 1–2 tablespoons warm broth or cream. Serve warm with extra Parmesan or parsley if desired.

Notes

  • Use fully cooked sausage: Smoked or fully cooked beef sausage works best because it only needs browning and reheating.
  • Do not boil the cream: Keep the sauce at a gentle simmer to help it stay smooth.
  • Skip pre-boiling the gnocchi: The gnocchi cooks directly in the skillet and releases starch that helps thicken the sauce.
  • Grate Parmesan finely: Fine Parmesan melts more evenly and is less likely to form clumps.
  • Adjust the sauce: Add a small splash of broth or cream if it becomes thicker than you prefer.
  • Try another sausage: Fully cooked chicken or turkey sausage can be substituted.
  • Store leftovers: Refrigerate cooled leftovers in an airtight container for up to 3 days.
  • Reheat gently: Warm leftovers over low heat with a small splash of broth or cream to loosen the sauce.
