Ingredients

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 2 tablespoons honey
  • ¼ cup mini chocolate chips
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Equipment

  • Medium mixing bowl
  • Silicone spatula or spoon
  • Baking tray or large freezer-safe plate
  • Parchment paper
  • Tablespoon or small cookie scoop
  • Microwave-safe bowl
  • Fork
  • Airtight freezer-safe container

Method

  1. Cover a baking tray or freezer-safe plate with parchment paper.
  2. Measure 1 cup Greek yogurt into a medium mixing bowl.
  3. Add ½ cup creamy peanut butter and stir until evenly combined.
  4. Add 2 tablespoons honey and stir until the filling is smooth.
  5. Gently mix in ¼ cup mini chocolate chips until evenly distributed.
  6. Portion about 1½ tablespoons of mixture per bite onto the lined tray. Make approximately 12–14 bites.
  7. Freeze for 45–60 minutes. The bites should be firm enough to hold their shape during dipping.
  8. Combine 1 cup chocolate chips with 1 tablespoon coconut oil. Microwave in 20-second intervals, stirring between each, until smooth.
  9. Coat each frozen yogurt bite in the melted chocolate using a fork. Allow excess chocolate to drip back into the bowl.
  10. Place each coated bite back onto the parchment paper.
  11. Freeze for another 10–15 minutes, or until the chocolate shell is firm.
  12. Transfer to an airtight freezer-safe container, placing parchment between layers.

Notes

  • Use thick Greek yogurt rather than regular yogurt so the bites hold their shape.
  • Stir natural peanut butter thoroughly before measuring if the oil has separated.
  • If the filling feels too soft to scoop, refrigerate it for 10–15 minutes.
  • Do not dip the bites until they are fully firm.
  • Semi-sweet, dark, or milk chocolate can be used for the coating.
  • Let frozen bites sit at room temperature for 3–5 minutes before eating for a creamier center.
  • Store in the freezer for up to 1 month for the best texture.
