Pili Pili Eggs

A bold and spicy breakfast made with eggs gently cooked in a rich tomato and pili pili pepper sauce. Ready in about 30 minutes and perfect for beginners.

Ingredients
  

  • 6 large eggs
  • 2 tablespoons cooking oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1–2 pili pili peppers, finely chopped
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro or parsley, chopped

Equipment

  • Large skillet with lid
  • Wooden spoon
  • Knife
  • Cutting board
  • Measuring spoons

Method
 

  1. Gather and prepare all ingredients.
  2. Cook the onion until soft, then add the garlic.
  3. Stir in the tomatoes and tomato paste until thickened.
  4. Add the pili pili peppers and seasonings.
  5. Simmer the sauce until thick.
  6. Make small wells and crack the eggs into the sauce.
  7. Cover and cook until the egg whites are set.
  8. Sprinkle with fresh herbs.
  9. Serve immediately with bread, chapati, naan, or rice.

Notes

  • Remove the chili seeds for a milder version.
  • Feta cheese makes an excellent topping.
  • Fresh tomatoes can be replaced with canned diced tomatoes.
  • Reheat leftovers gently over low heat.
  • Best enjoyed immediately after cooking for creamy yolks.
