Ingredients

  • 1 sleeve Ritz crackers (about 30–35 crackers)
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 1½ cups chocolate chips
  • 2 cups mini marshmallows
  • ½ cup graham cracker crumbs

Equipment

  • Large rimmed baking sheet
  • Parchment paper
  • Heat-safe spatula
  • Offset spatula or spoon
  • Cutting board

Method

  1. Preheat the oven to 350°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Arrange the Ritz crackers in one flat layer.
  4. Melt the butter in a saucepan over medium heat.
  5. Add the brown sugar and cook for about 2 minutes, stirring until smooth and bubbling.
  6. Pour the butter mixture evenly over the crackers.
  7. Bake for 7–9 minutes, until the coating is bubbly.
  8. Sprinkle the chocolate chips over the hot cracker layer.
  9. Let the chocolate chips soften for 2–3 minutes.
  10. Spread the softened chocolate into an even layer.
  11. Scatter the mini marshmallows over the chocolate.
  12. Sprinkle the graham cracker crumbs over the marshmallows.
  13. Broil for 30–60 seconds, watching closely until the marshmallows are lightly golden.
  14. Chill the bark for 20–30 minutes, until firm.
  15. Break the chilled bark into pieces and serve.

Notes

  • Watch the marshmallows closely under the broiler because they can brown very quickly.
  • Let the chocolate sit on the hot cracker layer before spreading so it melts smoothly.
  • Chill the bark fully before breaking it apart for cleaner pieces.
  • Store leftovers in an airtight container in a cool, dry place for up to 2 days.
