These superfood breakfast cookies are chewy, healthy, and packed with rolled oats, banana, chia seeds, flaxseed, pumpkin seeds, and dried fruit. They are naturally sweetened, beginner-friendly, and ideal for make-ahead breakfasts or snacks.

Ingredients
  

  • 2 medium very ripe bananas, about 1 cup mashed
  • 1/2 cup natural peanut butter or almond butter
  • 1/4 cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup oat flour
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/3 cup pumpkin seeds
  • 1/3 cup raisins or dried cranberries
  • 1/4 cup mini dark chocolate chips, optional

Method
 

  1. Preheat the oven to 350°F. Place a rack in the center of the oven and line a large baking sheet with parchment paper or a silicone baking mat.
  2. Peel the bananas and place them in a large mixing bowl. Mash with a fork until mostly smooth. Small lumps are fine.
  3. Add the nut butter, maple syrup or honey, and vanilla. Stir until the mixture looks smooth and evenly blended.
  4. In a separate bowl, combine the rolled oats, oat flour, chia seeds, ground flaxseed, cinnamon, baking powder, and salt.
  5. Add the dry ingredients to the banana mixture. Fold until no loose flour remains. Avoid heavy stirring.
  6. Fold in the pumpkin seeds, dried fruit, and optional chocolate chips until evenly spread through the dough.
  7. Leave the dough at room temperature for 10 minutes. This gives the oats and seeds time to absorb moisture.
  8. Scoop the dough into 12 equal portions, using about 2 tablespoons for each cookie. Arrange them about 2 inches apart on the prepared baking sheet.
  9. Use the damp back of a spoon to flatten each portion into a round about 1/2 inch thick. The cookies will not spread much while baking.
  10. Bake for 13–16 minutes, until the tops look dry and the edges are lightly golden. The centers should still feel soft.
  11. Let the cookies cool on the baking sheet for 10 minutes. Transfer them to a wire rack or plate and cool for another 10 minutes before serving.

Notes

  • Use bananas with plenty of brown spots for the best sweetness and moisture.
  • If the dough is too wet to scoop after resting, fold in 2 tablespoons rolled oats and wait another 5 minutes.
  • To make the cookies nut-free, replace the nut butter with sunflower seed butter.
  • For gluten-free cookies, use certified gluten-free rolled oats and oat flour.
  • Do not overbake. The cookies continue to firm as they cool.
  • Dried fruit works better than fresh or frozen berries, which can add too much moisture.
