Twice Baked Loaded Breakfast Potatoes

Crispy baked potato shells are filled with creamy mashed potato, cheddar cheese, smoky bacon, and baked eggs, then finished with fresh green onions. A hearty breakfast or brunch recipe with plenty of flavor in every bite.

Ingredients
  

  • 4 large russet potatoes
  • 4 large eggs
  • 6 slices bacon
  • 1 cup shredded cheddar cheese, divided
  • 3 tablespoons butter
  • ½ cup sour cream
  • 3 green onions, thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Scrub the potatoes under cool running water and dry them thoroughly.
  2. Bake at 400°F (200°C) for 50–60 minutes, or until fork-tender.
  3. Cook the bacon over medium heat for 8–10 minutes until crisp. Drain, cool, and crumble.
  4. Cool the baked potatoes for 8–10 minutes, then slice each one lengthwise.
  5. Scoop the centers into a mixing bowl, leaving about ¼ inch of potato inside each skin.
  6. Mash the potato with butter, sour cream, salt, and black pepper.
  7. Fold in ¾ cup cheddar cheese and about ¾ of the bacon.
  8. Divide the filling evenly among the potato shells.
  9. Make a shallow well about 2 inches wide in the center of each filled potato.
  10. Carefully add an egg to each potato well. If needed, use only enough egg white to prevent overflowing.
  11. Bake at 400°F (200°C) for 12–16 minutes, until the whites are set and the yolks reach your preferred doneness. Add the remaining cheese and bacon during the final few minutes.
  12. Top with sliced green onions, rest for about 2 minutes, and serve warm.

Notes

  • Choose large russet potatoes with similar sizes so they cook evenly.
  • Leave about ¼ inch of potato inside each skin to prevent the shells from tearing.
  • Avoid overmixing the filling, which can make the potatoes gummy.
  • For firmer egg yolks, bake for an additional 2–4 minutes.
  • Monterey Jack, Colby Jack, or pepper Jack can replace cheddar.
  • For a meat-free version, omit the bacon and try sautéed mushrooms or diced bell peppers.
  • Filled potato shells can be prepared ahead and refrigerated. Add the eggs shortly before the final bake.
